Buffalo Chicken Meatballs Recipe


This buffalo chicken meatball recipe is easy, delicious, and yields about 26 meatballs in one batch. There are veggies inside—including spinach—but you won't even know they're there. Feta cheese adds a little something extra and the hot sauce finishes it off. It's the perfect game night appetizer.

Ingredients:
  • 1 1/4 lb chicken tenderloins
  • 1/4 cup mini sweet peppers, chopped
  • 2 green onions, chopped
  • 1/4 cup baby spinach
  • 1/4 cup bread crumbs
  • 1/4 cup feta cheese, crumbled
  • 1/2 tsp minced garlic
  • 1/3 cup hot sauce
  • 1 large egg
  • Extra hot sauce, for drizzling

Preheat your oven to 400 degrees

Chop your chicken into small pieces and grind it up in a food processor. Alternatively, you may purchase ground chicken.


Put your chopped peppers, chopped green onions, and spinach into a food processor and chop them up until they're very small pieces.


They should look something like this.


Put your chicken, chopped veggies, bread crumbs, cheese, garlic, and hot sauce into a bowl.


Mix them up a bit and then add your egg.


Use your hands (after you wash them, of course) to mush the mixture together.


Line a cookie sheet with foil and spray with non-stick spray.

Roll chicken into 1 1/4 inch balls and place onto the cookie sheet.


Bake for about 17 minutes.


Admire the deliciousness.


And then drizzle with hot sauce.


Serve with pasta, or as is.

These meatballs are sure to be a hit on game night!
Ingredients

Instructions

Bake for about 17 minutes.Drizzle with hot sauce.Serve.
